Chicken salad is one of those dishes that lives or dies on how it is made. Get it right and it is one of the most satisfying things you can eat in the middle of a warm afternoon. Ours leans on dill, which is what gives it that clean, bright, almost garden-fresh taste instead of the heavy quality people expect from a scoop of chicken salad. It is fresh-made, and you can taste that in the first bite.
What we like about it is that it never feels like a compromise. It is not the thing you order because you are being good, and it is not the thing you order because you gave up. It is just a good sandwich, and it holds up to being ordered week after week without ever getting old on you.
What comes on the sandwich
The sandwich version starts with fresh-made dilled chicken salad and gets topped with Swiss cheese, lettuce, tomatoes and sunflower seeds. That last one matters more than you would guess. The sunflower seeds add a small crunch in every bite, so the sandwich has some texture to it instead of going soft in your hands. The Swiss brings a little richness, the lettuce and tomatoes keep it fresh, and the dill runs through all of it.

We take the same house-made dilled chicken salad and serve it over romaine with pepper jack cheese and black olives.
Why the salad version eats differently
The pepper jack is the change you notice first. It brings a little warmth that the Swiss on the sandwich does not, and it plays against the cool dill in a way that keeps every forkful interesting. The black olives add a salty note, and the romaine gives you something crisp to carry it all. It is the same chicken you would get between two slices of bread, but the whole thing reads lighter and a little sharper. Order it once each way and you will know which one is yours.
House-made is the whole point
Anybody can put chicken salad on a menu. Making it in your own kitchen is a different commitment. It means somebody stands there and does the work instead of opening a container, and it means what you get is the version we decided was right rather than the version somebody else decided was cheap enough. That is why the dill actually tastes like dill here and why the texture holds up whether it is going on bread or over greens.

The Dilled Chicken has a sibling on our menu. The Apple-Nut Tuna is our apple-walnut tuna salad, and it works exactly the same way. As a sandwich it comes with Swiss. As a salad it comes over romaine with shredded carrot. The apple and walnut give it a sweetness and a bite that the dilled chicken does not have, so it is a genuinely different meal and not just a swap of the protein. Between the two of them, most people find one they end up ordering on repeat.
